Take A Chance On Dill!

Seed or weed? Consumed either way, dill is unique yet familiar. The best way to use dill is fresh from the garden, so during the growing season, cut your dill to use fresh as you need it. If not kept cut, your dill will go to seed, so cut often until you are ready to switch to seed production.

If you find that you have cut more than you can use, dry the excess in the microwave. Spread the dill in a single layer on a paper towel and microwave on high for 3 minutes.

The result is beautiful and tasty – much better than dried dill you buy in the grocery store. After microwaving, remove and discard the hard stems, crumble the leaves, and store in an airtight container protected from light.

The taste of dill leaves resembles that of caraway, while the seeds are pungent and aromatic. Freshly cut, chopped leaves enhance the flavor of dips, herb butter, soups, salads, fish dishes, and salads.

The seeds are used in pickling and can also improve the taste of roasts, stews and vegetables. Try grinding the seeds to use as a salt substitute. Both the flowering heads and seeds are used in flavored vinegars and oils.

Dill is a well-known herb for pickling cucumbers and beets, but is also has the ability to add an original flavor to meat marinade, fish, chicken, salads, vegetables, soups, salad dressings, and home-made bread.

Of course, being an herb, dill has many uses including home remedies for all sorts of things like remedies for colic, increasing breast milk and relieving gas and heartburn.  It can even be used to eliminate bad breath and is sometimes used as a mild sedative. And,

Among the ancient uses, it has even been named as a remedy for impotence, and burnt dill seeds were used to treat wounds.  The essential oil that can be extracted from dill is sometimes used as a perfume in cosmetics, as well as for food flavoring.

Dill seed is a natural for pickling, and fresh or dried dill weed:

  • Is often paired with cucumbers in salads and fish dishes, especially chilled salmon.
  • Adds excitement when used in cream sauces and mixed with butter for spreads and toppings
  • Works well as a simple seasoning for boiled new potatoes, along with garlic

And no matter which way we serve it, anything flavored with dill is usually cause for saying…

Greek cooking. A simple salad of lettuce, cucumber, tomatoes and green peppers, comes with a dressing of lemon juice and handfuls of finely chopped fresh dill. A dish of stuffed cabbage leaves has a creamy dill sauce.

There’s such a plentiful supply of this feathery, aniseed-tasting herb that they can be generous with it. For me, you can’t beat the combination of fish and dill in a soup.

Dill has been used for both its culinary and medicinal properties for thousands of years. Crushed dill seeds, when diluted with water, can be used as a nail-strengthening bath.

When chewed, dill seeds can be highly effective in curing bad breath. It can also be used to relieve stomach symptoms. Simply chop a little dill and mix it with plain low fat yogurt.

Did you  know that one tablespoonful of dill seed contains as much calcium as one-third cup of milk?

Also, dill tea is used as a stomach soother, to overcome insomnia, and even to cure hiccups. In its diluted form, it may be used as a remedy for gas in infants.

    You are right. The Every Other Day Diet (EODD) means eat what you want every other day. No calorie restriction.
